3 diabetes-friendly dessert recipes you can try out to perk up the festivities

When festivals are here, it is quite impossible to imagine celebration without sweets. It’s like a tradition of every Indian home to enjoy scrumptious food and sweets.

But if you (or any family member) are diabetic, you would usually avoid bringing sweets. For this festival season, here are some healthy and delicious dessert recipes for diabetic people which you can relish!

1. Apple Rabri

Ingredients:

1 litre Skim milk,

4 apples,

1/2 teaspoon cardamom.

Green cardamom powder: 1/2 tsp

Ensure® Diabetes Care: 3 scoops

Method:

Boil 1 litre milk and keep stirring until it is reduced to half. Wash and chop the apples and add them in rabri. Once the rabri turns thick, turn off the flame add cardamom powder and Ensure® Diabetes Care mix properly. Garnish with almonds (optional) and serve.

2. Ragi Oats Laddoo

Ingredients:

Ragi flour – 1½ cup

Oats flour – 1 cup

Milk – ½ cup

Ghee – 1 Tbsp

Cardamom powder – 1tsp

White sesame seeds – ¼ cup

Coconut powder – ¼ cup

Ensure® Diabetes Care: 4 scoops

Method

Separately lightly roast oats and ragi and when they cool down, grind separately.  Roast white sesame seeds and cashew nuts. In a pan, put some ghee and roast the oats flour. Keep it separately and roast the ragi flour with ghee in a similar way. Mix both flour and add remaining ghee. Add cardamom powder, Ensure® Diabetes Care and mix well. Allow the mixture to cool down. Apply ghee over your palm and make small balls in the shape of laddoos. Roll over sesame seeds and coconut powder and your healthy laddoos are ready.

3. Lauki Gajar Halwa

Ingredients

Lauki- 1/2 medium

Carrots- 2 large

Skim Milk – 1/4 cup

Saffron – a few strands

Cardamom – 1 (powdered fine)

Almonds / raisins / Cashew for garnish (Optional)

Ghee – 2 tbsp

Ensure® Diabetes Care: 5 scoops

Method

Wash, peel and grate the carrots and lauki. Put the milk and a pinch of saffron in a pressure cooker for 4 whistles. In a pan, heat some ghee, sauté the nuts, add cooked veggies and cook on low flame for 5-6 mins. Switch off the flame add Ensure® Diabetes Care and cardamom powder, mix well. Garnish with nuts and serve.

  7. I have seen a couple of close family friends who have diabetes and they refrain from enjoying sweets. But with recipes, now they can also satisfy their sweet cravings. Reading about Apple Rabdi, it reminds me of Sanjeev Kapoor’s book.:) I often make Lauki Halwa , will add carrots to it from now on. I am sure the color will be very vibrant.

  9. This is a revelation. I have used Ensure but I didnt know Ensure could be added to desserts or to any dish.I thought it was just a supplement to be taken with milk or water. My sasuma would make the lauki carrot halwa without any sweetener and have it as she was highly diabetic
